Our meat comes mostly from Black Angus or Black Angus crosses here in AZ. They are typical slaughtered between the age of 18 to 22 month, so you can be assured to get tender, fine tasting meat. Young cattle simply produce the tastiest meat. Cows under the age of 30 months of age can only obtain the highest quality of beef.
Many of our local AZ, family owned, grass-fed farmers are Beef Quality Assurance certified; some even go further like Rafter S cattle Ranch up in the Mohave county of AZ; they are IMI Global certified in source/age verification, NHTC (non-hormone-treated cattle), verified natural plus, non-GMO project verified with Beef quality assurance certified, with goal of progressive beef genetics and Gap 4 qualified.
And Big G Ranch can assure you that you will taste the difference.
Often fresh beef is aged for a couple of days before processing. Big G Ranch is aging or maturing its beef at least 2 weeks to allow enzymes naturally present in the meat to break down the muscle tissue, resulting in improved texture and flavor.
These days, most beef is aged in plastic shrink-wrap—a process known as wet-aging. Big G Ranch is dry -aging.
All our animals are healthy, AZ fed and bred animals. We procure all our animals from small, family-owned farmers in AZ. Many animals do not travel more than 80 miles in their life from pasture to processing plant, none more than 300 miles. This is very different from animals who have been raised let’s abroad – in this case, the beef will have traveled many thousands of miles putting a great impact on the animal, beef and the environment.
Big G Ranch prefers to pay rather more to the local AZ farmers than for transport.
Since all our animals are identified from Ranch to fork via its ear tag you can be assured that only healthy animals have been butchered and you know where this animal is coming from in AZ. Since only when the animal is sold to 100% percent it will be slaughtered you can be assured that you get the very freshest frozen meat there is in AZ on your table.
Big G Ranch motto is – Eat less, but better!
